Adding Eggs , <strong>must one at a time</strong>!) (Mixture 1) add<strong> Sour cream </strong>into the mixture and blend it well.</p>

<h2>大理石芝士蛋糕：</h2>

<h2>制作方法：</h2>
<p>预热烤箱 160-170度</p>
<p><strong>蛋糕底部：</strong></p>
<p>1.压碎90g饼干，作为蛋糕底。  将饼干装入一个保鲜袋，用擀面杖来回滚动，把饼干压碎<br />
2.融化30g黄油<br />
3.将饼干碎与融化的黄油混合均匀，将其倒入蛋糕模具中，用手压平。放入冰箱冷藏约10分钟。<br />
<strong>芝士蛋糕馅：</strong></p>
<p>1.室温软化奶油芝士，把软化后的芝士和糖混合搅拌<br />
2. 依次逐个加入鸡蛋，混合均匀。再倒入酸奶油或鲜奶油，混合均匀<br />
3.倒出约30g的混合物，待会儿与融化的巧克力混合，做蛋糕上的大理石花纹。<br />
4. 融化25克黑巧克力（或者可以把黑巧克力换成蓝莓，打成蓝莓酱）与倒出的30克混合物，搅拌均匀.（或者直接在融化的巧克力酱里倒入少许酸奶油混合均匀）<br />
5.把3中另一部分的芝士蛋糕液体倒入底层铺有饼干的蛋糕模具中。<br />
6.把4中的巧克力酱（蓝莓酱），用勺子滴几滴在液体表面，之后用竹签裱出大理石花纹。<br />
7.放入预热的烤箱，烘烤45-55分钟， 表面凝固即可。<br />
8.冷却30分钟后，脱模，然后放入冰箱冷藏4小时，即可享用。</p>

<p style="text-align:center;">What makes today special? Yep! You may guess it is the International Women’s day, that’s absolutely rihgt!~ But also, Today is thePancake Day in the UK, which is also called Shrove Tuesday. It is a fun festival, because it is one day of the year when almost everyone eats a pancake. On that day it is traditional to eat pancakes, toss pancakes and take part in pancake races.</p>
<p style="text-align:center;">The origins of eating pancakes arose from Christians who wanted to use up all the rich foods in their cupboards before<strong><a href="http://www.bbc.co.uk/schools/religion/christianity/lent.shtml" target="_blank"> Lent</a></strong> (<strong><a href="http://www.bbc.co.uk/schools/religion/christianity/easter.shtml" target="_blank">Easter</a></strong>- a festival celebrating the beginning of Christianity). During Lent, <strong>eggs, sugar and butter </strong>were not allowed so these ingredients were used to make pancakes. For most people today, it&#8217;s not a religious festival, and people just enjoy eating lots of pancakes and having fun.</p>
<p style="text-align:center;">A traditional English pancake is very thin and is served immediately from the frying pan. The traditional way of serving pancake in the UK is sprinkle Caster sugar and Fresh Lemon Juice on the top of the pancake, and then fold or roll it up to eat. But now British actually enjoy a variety of pancake fillings, i.e Strawberry, Honey, Banana, Chocolate sauce, cheese, etc…</p>
<p style="text-align:center;">So, for this week’s post, I am going to make a Pancake for you. It is really simple! (<strong>Only 3 basic ingredients: Milk, Eggs, Flour</strong>) and it just like to cook a Chinese omelet so I named it as western Chinese omelet or sweet Chinese omelet.</p>

<h2 style="text-align:center;"><span style="font-size:13px;font-weight:normal;">1. Whisk <strong>100g Plain Flour (sifted)</strong>, <strong>2 Eggs </strong>together in a large bowl</span></h2>
<p style="text-align:center;"><a href="http://sarahww.files.wordpress.com/2011/03/step-1.jpg"><img class="aligncenter size-full wp-image-338" title="Step 1" src="http://sarahww.files.wordpress.com/2011/03/step-1.jpg?w=490&#038;h=275" alt="" width="490" height="275" /></a>2. <strong>Gradually</strong> add <strong>200ml Milk</strong> into the Batter and whisk hard. (don&#8217;t worry about any lumps as they will eventually disappear as you whisk) whisk until the batter getting <strong>Smooth</strong>.</p>
<p style="text-align:center;"><a href="http://sarahww.files.wordpress.com/2011/03/step-2.jpg"><img class="aligncenter size-full wp-image-339" title="Step 2" src="http://sarahww.files.wordpress.com/2011/03/step-2.jpg?w=490&#038;h=141" alt="" width="490" height="141" /></a>3. Add <strong>2 table spoon of Oil</strong> into the mixture and whisk until it is <strong>Smooth</strong> and <strong>Runny</strong>. Now you are ready to cook Your Pancakes.</p>
<p style="text-align:center;"><a href="http://sarahww.files.wordpress.com/2011/03/step-3.jpg"><img class="aligncenter size-full wp-image-340" title="Step 3" src="http://sarahww.files.wordpress.com/2011/03/step-3.jpg?w=490&#038;h=94" alt="" width="490" height="94" /></a>4. <strong>Drizzle </strong>and<strong> Heat oil</strong> into a frying pan, then<strong> Ladle</strong> the pancake mixture and pour into the pan with <strong>Medium heat</strong>. Allow the mixture to coat the pan and fry the pancake for 1-2 minutes on each side or <strong>until golden</strong>. (<strong>Flip</strong> the pancake over with a pan slice or palette knife &#8211; the other side will need a few seconds only &#8211; then simply slide it out of the pan onto a plate.)Repeat to make further pancakes</p>

To<strong> Serve</strong>, <strong>Traditionally</strong>, sprinkle each pancake with freshly <strong>Squeezed Lemon Juice</strong> and <strong>Caster Sugar</strong>, <strong>Fold in Half</strong>, then in half again to form triangles, or else simply <strong>Roll</strong> them up. Serve sprinkled with a little more sugar and lemon juice and extra sections of lemon.</p>

<h2>英式煎饼：</h2>
<p>在英国，今天是一年一度的煎饼节-<strong>Pancake Day</strong>, 也被称为是<strong><a href="http://baike.baidu.com/view/79501.htm" target="_blank">Shrove Tuesday-忏悔星期二</a></strong>。在煎饼节的这一天，几乎所有英国人都会吃煎饼，就像在中国，元宵节一定会吃汤圆一样。这个忏悔节其实是用来狂欢的，人们在这几天疯狂地玩游戏、踢球、跳舞还有聚餐，此外，很多地方都会举行翻煎饼比赛来庆祝这个有趣的节日。</p>
<p>煎饼节源于复活节前的大斋节（Lent）。基督徒们要在大斋节当天进行斋戒。传说大斋节到来前的最后一顿饭要用油脂、面粉和鸡蛋做成，因此煎饼往往成了“最后的晚餐”。</p>
<p>传统的英国煎饼的吃法，都会最后在煎饼上撒上糖或柠檬汁，折叠或卷起来吃。但如今很多英国人都喜欢加蜂蜜，草莓，奶油来做filling，尽情享受涂鸦煎饼的无限乐趣~</p>

<li>传统英式煎饼配以糖和柠檬汁，大家也可以自己随意加filling.比如草莓，奶油，巧克力酱，蜂蜜</li>

<li><span style="color:#000000;">Line a Baking Tray with baking or silicone paper</span></li>
</ol>
<p><span style="color:#ff0000;font-size:20px;font-weight:bold;"><strong>Directions:</strong></span></p>
<p style="text-align:center;"><strong> </strong><span style="color:#000000;"><strong>1. </strong><strong>Put 500g Flour and 80g softened Butter into a large bowl, Rub them together to create a breadcrumb-like mixture</strong></span></p>
<p style="text-align:center;"><strong><a href="http://sarahww.files.wordpress.com/2011/03/p1050147_e589afe69cac.jpg"><img class="aligncenter size-full wp-image-280" title="Step 1" src="http://sarahww.files.wordpress.com/2011/03/p1050147_e589afe69cac.jpg?w=490&#038;h=275" alt="" width="490" height="275" /></a></strong><span style="color:#000000;"><strong>2. </strong><strong>Add 80g Sugar, 2 Eggs and 25g Baking Powder into the Mixture, using a spoon to mix and turn the mixture gently, make sure they combine well.</strong></span></p>

<p style="text-align:center;"><strong> </strong><span style="color:#000000;"><strong>3. </strong><strong>Add half of the (115ml) Milk into the Mixture and keep turning gently with the spoon to combine. Then add the remaining Milk a little at a time and in order to bring the mixture to form a very soft, wet dough.</strong></span></p>

(Don’t worry, it is normal the mixture would be wet and sticky.)</strong></span></p>

Roll until its about 2.5cm in thick.</strong></span></p>
<p style="text-align:center;"><strong> </strong><span style="color:#000000;"><strong>7. </strong><strong>Relax the Dough slightly</strong></span></p>

Dip the edge of cutters in flour to prevent from being stick with the dough and place them onto the Baking Tray.</strong></span></p>

Then use a Brush to Glaze them with the beaten egg and salt mixture.</strong></p>

<p>准备工作：</p>
<p>烤箱预热到220度</p>
<p>在一烤盘上刷一点黄油（防粘），或在烤盘上铺上一层锡纸</p>
<p>制作过程：</p>
<ol>
<li>把所有的干的材料：500克面粉，80克糖，80g切成小块的室温黄油，和25个泡打粉一起混合加入一个大碗中，搅拌均匀。</li>
<li>把湿材料：2个鸡蛋和230毫升的牛奶混合。 先将一半液体倒入1中，用勺子搅拌，在慢慢将剩下的液体倒入，直至形成湿湿的，粘稠的面团</li>
<li>撒一些面粉在干净的台面上，把把面团拿出来， 再其表面再撒上些面粉</li>
<li>用手将面粉折叠，抛起，连续几次，过程中继续撒些面粉，使得面粉不要太黏，（但不要过多，以防面粉干裂），最后使得面粉表面光滑</li>
<li>在面团表面撒上些面粉，用擀面杖从中间开始上下来回擀，直至面团为2.5厘米厚。</li>
<li>让面团呼吸下</li>
<li>用一些模具把面团压成不同形状，注意在模具的边缘上撒上些写面粉，以防按压过程中面团粘住。把刻好的形状的小面团放到烤盘上</li>
<li>让烤盘上的面团醒几分钟，使得炮打粉可以呼吸。之后用刷子将蛋液（一个鸡蛋+一撮盐）刷在每个scone面团的表面。</li>
</ol>
<p>烘焙时间：</p>
<ol>
<li>把烤盘放进预热烤箱中层，烘烤15分钟 （或，当看到面团发起且表面呈金棕色的时候即可）</li>
<li>拿出烤箱，冷却一小会儿</li>
<li>在每个Scone司康饼中间涂上，果酱，奶油或黄油，一个传统英式下午茶必不可少的司康饼就完成了！</li>

<p><strong>Tiramisu</strong> in English, literally means &#8220;<strong>Pull Me Up</strong>&#8220;. It is just exactly the phrase that I have been thinking over again and again in these days. I hope someone could pull me up into the sky and let me feel the free of flying , someone could pull me up from the stress, let me feel the ease of life, someone could pull me up and bring me back to the childhood for enjoying the  pure pleasure. Unfortunately, some of my &#8216;wishes&#8217; couldn&#8217;t  immediately come true. But there is one thing that could pull myself up, which is to immersing  myself into the pure enjoyment of making a rich and indulgent Tiramisu for myself and my friends.</p>
<p>To make a classic  and delicious Tiramisu is not that difficult as you might think before, conversely,  it is really simple and only takes you 15 min to prepare and finish all the process. I bet all of you could finally make a piece of indulgent cake by yourself. Have you decide to have a try on it and Why not?</p>
<p>There are three core ingredients in making this classic dessert- <a href="http://en.wikipedia.org/wiki/Savoiardi" target="_blank">Lady/Sponge Fingers</a> (They are called <em>savoiardi</em> in Italian), <a href="http://en.wikipedia.org/wiki/Mascarpone" target="_blank">Mascarphone Cheese </a> and a flavour with liquor and Strong Espresso.</p>
<p>Now, follow me and to make a unique  Tiramisu for yourself and hopefully it will pull you up !~<br />

1.	Whip the <strong>Heavy Cream</strong> until evenly Blended: Put the Heavy Cream in a large bowl, whisk the cream until evenly blended.</p>

2.	Add E<strong>gg Yolk</strong> and <strong>Sugar</strong> into the Heavy Cream mixture. Whisk until they are thoroughly combined as Heavy Cream Mixture.</p>

3.	Quick Stir the <strong>250g Mascarpone cheese</strong> in another bowl to loosen it up.</p>

<p>4.	Add the<strong> Heavy Cream Mixture</strong> and <strong>Mascarpone Cheese together</strong>. Whisk until two mixtures completely combined and looks thick and creamy.   <strong>(Mascarpone Mixture)</strong></p>

<p>5.	Make a cup of strong <strong>Espresso </strong>(50ml) and let it cool.</p>

<p>6.	Dip some  <strong>Lady Fingers</strong> into the Espresso and use them to line the base of four serving glasses (breaking them into shorter lengths to fit the glasses). Put the coffee into a shallow dish and dip in a few sponge fingers at a time, dipping for few seconds  until they are nicely soaked, but not soggy.</p>

<p>制作方法：</p>
<ol>
<li>将120ML淡奶油打发均匀</li>
<li>将蛋黄和糖加入淡奶油中，打发，使其打发成奶糊状即可。</li>
<li>把250g马斯卡彭芝士放入另一碗中，用搅拌器打至松发。</li>
<li>把3中的马斯卡彭芝士和2中的淡奶油奶糊，均匀搅拌在一起，制成提拉米苏的芝士馅。(Mascarpone Mixture)</li>
<li>冲一杯50ml的意式浓缩咖啡，放凉 （Sarah本来想用illy的Espresso，不过忘了去Sainsbury’s买了，就用了Starbucks的Colombia Medium的instant coffee代替）</li>
<li>取几根手指饼干，在咖啡中快速浸泡下，然后铺入玻璃杯（容器）底部</li>
<li>在底部放有手指饼干的玻璃杯（容器）中，倒入一部分4中的芝士馅。</li>
<li>再在芝士馅上铺上一层被咖啡浸泡过的手指饼干，再倒上芝士馅，至装满，抹平。</li>
<li>放入冰箱冷藏2-4个小时以上。吃之前撒上些可可粉即可。</li>

<p>Have a try on making your own simple Classic Italian Tiramisu. To make a simple and lighter version, I didn&#8217;t  add any alcohol in my recipe as I want to have a taste of very original rich and indulgent  flavour of itself. Normally, some Tiramisu Recipes would add  <a href="http://en.wikipedia.org/wiki/Marsala_DOC">Masarla Wine</a> (or Brandy or Rum or <a href="http://www.tiamaria.com/">Tia Maria</a>) to give its richer flavour.</p>

<p>1．  把鲜奶油用小火煮至沸点，关火，冷却5分钟，待用。</p>
<p>2．  把蛋黄，细砂糖，香草精混合在容器中，充分搅拌打动 (Mixture 1)</p>
<p>3．  把牛奶和Mixture 1混合搅拌充分 (Mixture 2)</p>
<p>4．  用细筛网过滤Mixture 2，两至三次（至表面无小气泡）</p>
<p>5．  将液体倒入烤模具(Ramekins)中至2/3满</p>
<p>6．  把模具放入大的托盘中（用碗也ok），托盘中注入差不多到模具一半的热水，蒸烤(Bain-Marie)</p>
<p>7．  送入预热的烤箱（150度），烤30-40分钟（烤至表面成型，里面液体还有点晃动即可）</p>
<p>8．  取出烤箱，放凉至室温，放入冰箱1小时或隔1天</p>
<p>9．  从冰箱取出，在烤布蕾上撒上红糖，用瓦斯喷枪烤出焦糖状即可</p>
